Taiwanese Beef Noodles 台灣牛肉麵 is probably the most famous Taiwan street food! It is many people’s favourite taste of Taiwan. It’s so beefy and hot it’s perfect for this cold weather, also it’s delicious in hot weather too! Joanne makes this authentic, traditional hot Taiwan food and it tastes like the best beef noodles you’ve had. The ingredients below are for about 6 to 8 people. We cooked it and left more than half for another day, it gets even better with time.

Taiwan beef noodles
The ingredients 食材;

Taiwan beef noodle ingredients
- 600g shin beef
- 600g flank steak
- 3 carrots
- 3 tomatoes
- 1 bowl soy sauce
- half a bowl of dark soy sauce
- half a bowl of Taiwanese rice wine
- Taiwanese spice bag
- coriander (a handful)
- 4 spring onions
- 2 medium onions
- 2 large pieces of rock sugar (about 5 teaspoons of normal sugar)
- ginger (5 slices)
- 4 garlic cloves
- sour green vegetable pickle
- noodles
The method 作法;
- Chop your beef into squares
- Use boiling water to rinse your beef chunks
- Heat some oil in a large pan and add in the spring onion, chili, chopped onion (half of it), garlic and ginger
- When you can smell these vegetables cooking add in your chopped beef, quickly stir fry
- Add the soy sauce, dark soy sauce and rice wine, rock sugar, coriander and spice bag and then cover the pan for 5 minutes to stream and simmer
- Now add 2 litres of boiling water, turn the cooker to low/medium, cook for 45 minutes
- Add in the carrots, tomatoes and the rest of the chopped onion, cook for 15 more minutes
- Cook your noodles to be ready
- Get a large bowl, put in enough noodles for one person, top it with your hot beef stew and soup
- Sprinkle coriander, spring onion, chilli and sour green pickle

If you can’t find it in the Chinese supermarket then, use 5 star anise, a teaspoon of red pepper corns, half a teaspoon of cloves, a cinnamon stick, three bayleafs, three cardamom pods – all in a cotton bag. That should do the trick 🙂

Hi Joanne, first of all: thanks a lot for the great recipes. I have been in Taiwan this summer and miss the food a lot. So I already cooked a couple of your recipes like Ma-Po Tofu and Three Cup Chicken.
I have a question: I can not get rice wine here in Sweden. Do you know what I could use instead?

Hi BJ, Joanne says use some Vodka or other white alcoholic spirit. Be careful not to use too much, Vodka is double the strength of Rice Wine 🙂

I just made this exactly how you instructed, including the pickled veggies and it is the most authentic recipe I found. It tastes better than anything beef noodle soups I got at the taiwanese restaurants here in Virginia. I am really glad I found this recipe and keep up the incredible cooking. I love your beef noodles recipe – did it for the new years party and will do it the coming weekend for some colleague’s birthday.
As to your recipe of fermented tofu on garlic fried greens: what kind of fermented tofu do you use ? I found some rather neutral flavoured by Eaglobe and some other which is flavoured with chilli, additionally. Do you mix anything into this tofu when heating it up and melting it as a sauce ???
Is there any chance that you fill this TW-Duck website with more new recipes or do you only post new things on either youtube or the TW Teapot ???

Hi Steffen, Long time no hear from you! Actually summer is coming and we are evry busy on the fruitand vegetable garden! The fermented tofu I prefer is the spcy sauce one – so uit will be a chili one. You only use a small amount so it doesn’t really add a lot of heat.
Most of my web pages are a bit quiet now as I am enjoying the outside and gardening things. I plan to Taiwanese drinks soon and they will be on YouTube and then the websites at a later date. I hope your plants do well too!
