We’ve managed to fit another recipe in to our Youtube TaiwanDuck TV channel and here too, before Chinese New Year is upon us! Today we present to you 黃金三寶油飯, which is Golden Sesame Sticky Rice. This is a very rich steamed sticky rice dish, containing lots of exotic flavours and varied textures. It’s often reserved for Chinese New Year and it’s traditional to make a very large amount – because it’s good luck to have leftovers. The video and ingredients seem quite long but it’s not that complicated, really. Read on below…

Golden Sesame Sticky Rice 黃金三寶油飯

The ingredients 食材 are as follows;

  • sticky rice (2 rice bowls rice, half bowl of barley, soaked with 2.5 bowls of cold water overnight)
  • dried chinese mushroom (chopped, soaked in cold water overnight)
  • golden dried shrimp (soaked in cold water overnight)
  • dried octopus (chopped, soaked in cold water overnight)
  • dried ear fungus (chopped, soaked in cold water overnight)
  • keep all this water from the preparation!
  • 300g of belly pork chopped small
  • coriander for garnish
  • quarter of a bowl of sesame oil
  • quarter of a bowl of veg oil
  • 2 tbsp thick soy sauce
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 1 heaped tbsp of sliced ginger pieces
  • 1 bowl of dried fried onion
  • 1 tsp five spice
  • a little white pepper
  • for around the dish when served – sliced fish eggs and sliced Chinese sausages

The method 作法;

  1. drain the rice of the water it was soaked in into a jug, then replace the water with an equal amount of the water used for soaking the flavoursome ingredients above (octopus etc)
  2. keep any remaining water from the soakings, we will use it for a soup in the video
  3. put all the rice and it’s replaced “water” in a large pan on the stove, when it’s boiling, turn to low
  4. in a wok or large frying pan now brown the pork, dry fry initially until crispy, later you can add a bit of oil
  5. add 1 tsp five spice and some white pepper
  6. put the browned pork to one side and using this same pan now fry the ginger pieces
  7. add the sesame and veg oil to the frying ginger
  8. fry them for a few minutes and then keep the oil and discard the ginger pieces
  9. now you fry the previously dried ingredients in this order; shrimps, octopus, mushroom, ear fungus, leave about half a minute between each ingredient addition
  10. now re-introduce your pork to the wok
  11. a few minutes later when you can really smell the aromas add the thick soy and normal soy sauce and the sugar
  12. once that’s heated up well add the dry onion
  13. fry that for a minute, making sure it’s all blended well and now you put the contents of the wok in with the rice pan, mix it all together
  14. the rice isn’t ready yet, so you continue to cook the rice pan with the lid on slowly
  15. when the rice is ready, you can test the bite, then it’s ready to serve
  16. we served garnished with coriander and surrounded by a circle of fish egg and sausage slices.

As usual Joanne has recorded a Golden Sesame Sticky Rice 黃金三寶油飯 cooking video so you can see and follow the timings, chopping sizes and method step by step, as she prepares this Chinese New Year favourite. She also makes a quick soup in the video, there was enough water left over from soaking the mushrooms, squid, shrimp etc to make quite a latge soup combined with fish balls, ham and spinach.
