Seafood fried noodles Taiwanese style 台式海鮮炒麵, cooking video

In Taiwan people eat a lot of seafood, after all it’s an island in the Pacific, surrounded by lots of fish! Also the land area is quite small for the alternatives such as cattle. After the Lunar New Year we are all stuffed with rich and mostly heavy food. So now it’s time for something lighter but still tasty and delicious. It’s time to have some Seafood fried noodles Taiwanese style 台式海鮮炒麵! This is a nice quick dish to prepare and your tastebuds will be rejoicing to the tastes of the sea very soon.

The ingredients 食材 (for 2);

  • 400g egg fresh noodles
  • half a bowl of fresh king prawns, butterfly cut them, add some salt
  • 4 fish balls, chopped
  • 4 Chinese style fish cakes, chopped
  • clams 6 or 8
  • chopped cooked ham, if you like
  • 200g of beansprouts
  • a sweet red pepper (or regular pepper is OK)
  • 1 spring onion
  • half a stick of celery
  • a small bunch of Chinese Chives 韭菜 (or garlic leaf) if you can find it
  • a small handful of coriander
  • fish powder (or fish sauce)

The method 作法;

  1. chop and prepare your ingredients
  2. rub a bit of salt and cornflour into the raw prawns (which you have half-sliced through their backs “butterfly”)
  3. we are going to prepare a lot of our food for stirfry by scalding it for a couple of minutes in boiling water, a bit long for a scald but not so long as parboiling! – Do this for all the meat/fish (but not the clams) and also the celery
  4. now you can use that water to put in the noodles to heat them through
  5. meanwhile we have put the frying pan on heat and once hot added a couple of tablespoons of cooking oil
  6. first add in the spring onions, now all the rest of the meat, clams and prawns, scalded vegetables
  7. now add your hot noodles out of the boiling water pan, drain the noodles, we don’t want water in the wok/frying pan
  8. add a few splashes of sauces – soy sauce, thick soy sauce and rice wine, fish sauce (or powder)
  9. put the lid on a bit so those clams really get steamed
  10. now you can add in your Chinese chives and bean sprouts
  11. it’s done, serve this now garnished with a little coriander (cilantro) and drizzle some sesame oil over the steaming hot noodles to taste
