How to make Taiwanese style 3 Cup Chicken 台灣風味三杯雞

Three cup chicken is one of the most famous Taiwanese recipes there is. Some might say it’s the signature main course of Taiwanese cooking! Joanne has so much experience cooking this to perfection, this is the definitive 3 cup chicken recipe 三杯雞 and method. Don’t follow any other version, choose Taiwan Duck‘s recipe for authentic Taiwanese taste!!! This dish has great aroma and taste, it’s not spicy, the sauce is rich and flavoursome, so all you need to accompany it is some nicely cooked rice. Choose some white wine too, to treat yourself after doing the cooking.

  7. Hi Joanne,

this is an absolute fabulous recipe and dish!!! The first time I intended to prepare this following your instructions I went to some of the Asian supermarkets here and tried to get some “Mirin” (the sweet cooking wine you add as ingredient into the 3rd cup). The Chinese lady at the store asked: what do you need it for?…and I replied: “the 3 cup chicken”! She was thrilled about me intending to cook this, so I figured she knew exactly what I was asking for. Though, she didn’t have Mirin at her store and recommended as substitute some Shao Xing. I think it worked that way, but I like the Mirin better, it helps the sauce getting thicker during the cooking process.
Thanks so much for your great recipes and all the best,

    Steffen (from Germany)

    • No Mirin isn’t so important sometimes I might have run out and don’t use it either. I cook this disk at least once a month it’s a favourite for me and the family. I hope yours turned out authentic. JJ
