Today on Taiwan Duck we have made a sauce that goes very well with many of our other recipes and many other Taiwanese street foods. Everyone likes a little spice and this Taiwanese Chili Seeds Sauce 台式辣椒子醬 can deliver a little or a lot, depending on how much you use! The special thing about this Taiwanese Chili Seeds Sauce 台式辣椒子醬 is its smoothness, at first it seems smooth and not so spicy but it builds up the heat on your palette subtly probably thanks to the oil content masking the heat for a short while. This sauce is not all about the heat it is also a flavoursome sauce. Please try it in the place of where you might have other shop bought chili sauces.

Chili seeds sauce, Taiwanese style
The ingredients 食材 (a bowl is a normal Chinese rice bowl);
- 1 bowl of red chili seeds
ingredients for the sauce
- 1 bowl of cooking oil
- half a bowl of sesame oil
- half a bowl of your favourite soy sauce
- 1tsp salt, 1 tsp sugar
- 1tbsp grated garlic, 1 tbsp grated ginger
- a pinch of vegetable starch
The method 作法;
- Put all the ingredients except for the 2 oils into a big heat-resistant bowl
- heat up your oil mixture in a pan
- when your oil is very hot, about 170 celcius take it from the cooker and pour into the bowl with all the other ingredients – carefully!
- stir up the mixture slowly and carefully with some chop sticks
- when it’s cooled you can put this sauce in a sterilised jar in the fridge, it will last for about 3 months

在台灣每當你去餃子店或牛肉麵店時記得桌上的那罐辣子醬媽?來來來很簡單教你DIY,包你感動到不行~~ Taiwan Duck 台灣鴨特製台式辣椒子醬:
材料:辣椒子一碗,油一碗,醬油1/3碗,薑末一大匙,蒜蓉一大匙,鹽一小匙,糖一小匙。
做法:
1.取一耐熱大碗除了油外將所有材料放入碗中
2.將兩種油一起倒入鍋中燒滾後直接將之沖入碗中並以筷子拌一
拌,待涼裝入罐中放置冰箱~~完成:)

Thanks Joanne. I always love to make this sauce but afraid that I might burnt it. Now that I saw your show, I am going to make it and enjoy it too. Loved your recipes. You make it so simple to follow and delicious to eat. My menu have expanded.

Hi Joanne, do you think I can double up the ginger and garlic and will it makes it less spicy hot?
I made Run Lou Fan with your recipe for my friends last weekend and serve them this Chilli Seed Sauce. They went home very happy and took the chilli seed sauce with them…that good. You make me a better cook. Thanks Joanne. I told them about you too.
