We cooked Salt and Pepper Pork Ribs 椒鹽排骨 and made an accompanying video. Ribs are a big favourite for a Chinese starter dish and it’s also true in Taiwanese cuisine. This is our favourite way to prepare ribs, the other common Taiwanese way to use ribs is in a clear soup which will appear on TaiwanDuck later in the year. Whatever you make with the ribs make sure you choose some nice meaty ones from a good butcher!

salt and pepper ribs
The ingredients 食材 (for 4);

salt and pepper ribs ingredients
- 500g Pork Ribs, chopped
- Onion, Garlic, Ginger, a red chili
- A Spring onion
- A red pepper
- Potato flour, Water
- Sweet potato powder
- Rice wine, Sesame oil
- Black, white & red pepper
- Salt, Five spice
- Black vinegar (or Worcester Sauce)
The method 作法;
- chop up the ribs and put them in a mixing bowl
- add a dash or rice wine, sesame oil and black pepper, white pepper and red pepper
- now add the black vinegar (or Worcester Sauce)
- add a little potato flour and a dash of water and mix it all up with your hands
- a minute later take the rib pieces one by one and coat in sweet potato flour (potato flour is OK if you can’t get that)
- now you are going to deep fry the ribs so you need the oil between 1 and 2 inches deep, get it very hot and put the ribs in (the flour on the ribs should have started to wetten – this means it’s bonded to the meat, good)
- cook til golden brown, close the heat and keep the ribs in the hot oil to cook through for 3 minutes
- drain the ribs and put them to one side
- in another hot pan stir fry all the veg and spices (garlic last)
- in the original pan get the oil very hot again and re-fry the ribs for a minute
- drain the ribs and put them in with the spices and vegetables, stir fry and toss it all for a minute on very hot heat
- That’s it ready to eat, garnish with choppen spring onion and serve with rice and greens if it’s a main course rather than a starter (we did!)

So glad to see your new website. It’s really nice to see not just Taiwanese recipes but also the connection with how to make it in the UK; finding the right ingredients etc.
I’m a young English chap with a big heart for Taiwan! My friends call me 大厨 because I love to cook Chinese and Taiwanese food so much. I work for an international Christian organisation and have met many Taiwanese who come to study with us. I love to cook for them. My favourite Taiwanese street food I like to cook in the UK is Gua Bao 刮包. So good!!
Anyway, just to say ‘hello’ and encourage you in your creative work on your website.

I made ‘dan bin’ and omlet rice before, both are good for breakfast, you can search them on this website. If you have any other special favourites, just ask. I live in UK so I sometimes have to use slightly different ingredients but still make delicious Taiwanese food!

Put some salt in the marinade.
Also when you stir fry the onion, chilli, ginger, garlic you also have some salt and pepper in. You can use white or black pepper as you wish. Its Hua Jiao powder. If you can buy Taiwan Salt n pepper powder its easy to use – all-in-one.
