How to make Mapo Tofu 麻婆豆腐 Taiwanese style, cooking video

Mapo Tofu 麻婆豆腐 translates roughly as “Grandma’s Spicy Tofu”. And that is a pretty good description, if your grandma made it for you. If you’ve found this recipe looking for vegetarian food then the recipe will need a little change. Traditionally this dish also has pork mince alongside the little tofu cubes, so you’ll need to cut out the pork and add some vegetable stock. This version is a little less spicy than favoured in Taiwan, we can’t stand that much heat!

The ingredients 食材, to serve 2 people, are as follows; (video made for 1 person)

  • 100g of minced pork
  • firm tofu 100g
  • 2 spring onions
  • 2 tbsp soy sauce
  • a small piece of ginger and 2 garlic cloves finely chopped
  • a green and a red chili for colour (seeds removed to have less heat)
  • one medium onion
  • 1 tbsp chili paste, 1 tbsp yellow bean paste
  • 1 tsp sugar
  • 1 tbsp of cornflour for thickening, also a bowl of water
  • a dash of rice wine
  • +chopped coriander and chives for garnish

The method 作法;

  1. dry the tofu (it’s been in water) using some kitchen towel
  2. everything is in small pieces, so dice the tofu into small cubes
  3. once everything is chopped up we can go and heat up the wok/frying pan (very hot)
  4. put in a dash of cooking oil, add the pork mince and brown it stirring all the time
  5. add the ginger and garlic
  6. now add 1 tbsp of rice wine
  7. add the chili and yellow bean pastes
  8. followed by the onion
  9. it’s nice to add garlic flower stems now (but it’s out of season here)
  10. add the soy sauce, optionally add red pepper oil now if you want it very spicy
  11. put in the chopped chillies
  12. now add in the water (half Chinese bowl)
  13. at last it’s time for the tofu pieces, be careful now and stir only very gently, you don’t want to break your nice tofu cubes
  14. let it all slow cook together for a few minutes
  15. now add the cornflour/water mix so that the sauce will be more thick
  16. finally add your spring onions and stir in just for a minute, then it’s ready to serve with rice

As usual Joanne has recorded a cooking video so you can see and follow the timings, chopping sizes and method step by step, as she prepares the Mapo Tofu 麻婆豆腐. We made quite a large quantity today and what you can see on the dish picture (above) is only half of the meal we cooked, we left the other half in the pan, later we put it in a plastic box in the fridge, it’s easy to heat up and have a good hot meal quickly. There were only 2 of us to share this meal tonight.

    • I’m so happy to hear you like the Mapo Tofu, which is very nutricious. I have always loved tofu from child time to now, I never get bored and try many way to cook them. This is one of my favourites but I like Braised Tofu the best. I made it a few months ago, why not try this too? Thanks again for your comments. JJ
