We managed to get some lovely fresh duck legs on special offer just in time for this dish which is great in the colder weather. Ginger duck 薑母鴨 was requested by Eric Liu and here it is. This meal has a lot in common with Taiwanese Sesame Wine Chicken, so if you like that meal, and you like duck, then you will love this. The flavour is very distinct due to the wine, sesame and Chinese medicine roots in the stew. Just like Sesame Wine Chicken this is a great dish to fight off those winter chills!

Ginger Duck, ready to eat
The ingredients 食材;

Ginger Duck ingredients prepared
- 3 duck legs
- 5 red dates (jujube) 紅棗
- 2 pieces ginger
- spring onion
- goji berries 紅棗
- 當歸 Chinese angelica 5片
- licquorice root, 2 slices
- 黃耆Astragalus 8片
- ginseng root 蔘鬚一小把
- Chinese cabbage
- rice wine, half a bottle
- sesame oil
- salt ‘n’ pepper powder
The method 作法;
- Cook all your chinese medicine roots for about half an hour in 2 bowls of water
- chop up your duck legs and rinse in boiling water
- heat up a frying pan, use 1/3 bowl of sesame oil
- add the smashed ginger to the frying pan and fry until it is the flavour comes out
- add the duck and stir fry for 3 or 4 minutes
- add the half bottle of rice wine, add the hot Chinese medicine soup
- cover, heat to boiling and then turn the heat low, cook for 25 or 30 minutes
- after the 30 minutes or so add in the chinese cabbage and bring to the boil again
- That’s it. serve the meal with a little dish of salt & pepper powder to dip

Hello! I am going to make this asap. I live in Taiwan so it will be super easy to find all the ingredients! I just wanted to let you know that I was writing a shopping list and I noticed that you used the word 紅棗 to translate “goji berries”. I think it should be 枸杞.
