Here is a delicious centrepiece for any meal! Steamed salty egg and pork mince 鹹蛋蒸肉 Taiwan style is something that my mother used to cook only occassionaly, when my old uncle came to visit. It’s not that it was especially his favourite but the soft texture of the mince, and finely chopped vegetables, topped with a couple of salty egg yolk halves, and served with rice was easy for him to eat without his teeth! Anyway I always used to look forward to that uncle visiting me… If you like pork and you want to make a dinner that conceals hidden vegetables – for fussy children – then this is a great dish. Also I love the taste. As it’s steamed there’s no added oil to worry about and the sauce is fantastic with rice. - 200g pork mince
- 3 salty eggs
- chopped veggies:
- 1/2 tsp sugar, salt and white pepper
- 2tbsp rice wine
- 2tbsp soy sauce
- 1tsp sesame oil
