Home made tapioca pearls for bubble tea, bo-ba tea 自製波霸粉圓

Here Kai-Li takes over to make home-made tapioca pearls for bubble tea 自製波霸粉圓 (pearl milk tea, also known as bo-ba tea). This is a very popular item in Taiwan where the famous bubble milk tea is so popular! While its easy to get tea, milk and sugar anywhere in the world, finding these tapioca pearls isn’t so easy. So why not make your own?

The ingredients are so simple with sugar and water and the only slightly tricky thing to find being the Tapioca flour. If you can’t find it in a nearby store why not buy it from Amazon – UK price is about 6 including delivery for a kilo. In the US its about $7.50 for a big bag.

  • 200g Tapioca flour
  • 80g brown sugar
  • 130ml hot water
  • and follow the method in the video!

There’s a key step in the method that I will highlight to you now. If you add the boiling water to your flour and sugar but don’t get a workable, kneadable dough you have to do the following: Take out a palm sized piece of dough and put it in a pan of boiling water for 5 minutes. Take it out and mix it back in with the rest of your dough and then it should be much more workable, so you can go ahead and make your pearls any size you like.
