Pork floss (自製肉鬆) might sound a bit weird to westerners who only know of two other ‘floss’ products; Candy floss and the floss we use for cleaning between teeth. It is of course nearer to candy floss – in that it is a food that has been teased into a collection of tiny fibres. The home made pork floss 自製肉鬆 is a bit more granular – but tastes the same. It is a very common accompaniment to meals sprinkled here and there, adding a meatiness and sweetness to plainer foods, for example, like rice, bread, and many more. You will find many baked and refrigerated snacks in Taiwan, including in 7-11, with pork floss in (or on) them. In Taiwan you can also buy fish floss, made in a similar way.

  • white pepper,
  • rice wine,
