Joanne shows you how to make lovely tasty – crispy on the outside, soft in the middle – fried whitebait. She just uses a very light batter to avoid the finished dish becoming too ‘bready’ or oily. Everybody seems to like these as a starter and Joanne was inspired to make them after having a similar dish at an Italian restaurant!
Fried Whitebait Fish 酥炸小魚 ingredients
- whitebait fish
- dusted with in sweet potato flour,
- 1/3 of an egg to help the flour stick,
- a little salt n pepper,
- a pinch of fish powder
- To coat before frying: a plate covered with sweet potato flour
- Dip: 2tbsp mayonnaise, 1tsp mustard, 1/2tsp sugar and juice from half a lime.
Get your oil nice and hot before you start to cook and follow Joanne’s method of taking out the nearly browned whitebait just before they are ready and giving the oil a heat boost before finishing off the cooking. You can use your favourite fish-dip but please try Joanne’s mayo-lime-mustard – it’s great!
