Spring has come! Joanne’s garden has a lot of Chinese Chives growing vigorously. So today we want to show you this traditional Taiwanese Street Food of Deep fried oysters with Chinese chives 炸蚵嗲, which is so tasty and crispy and delicious. If you like oysters and the taste of the sea this is also going to be one of your favourites – it is for me! If you don’t like or have any Chinese Chives you can substitute them for Spring Onions (scallions).
The ingredients 食材 for 6 ‘cakes’;
- oysters 300g (6 x 50g)
- bunch chives
- 1 bowl rice flour
- 1 bowl flour
- 2 bowls water
- 1tbsp vegetable oil
- dipping sauce: 4tbsp ketchup, 1tbsp oyster sauce, 1/2 squeezed lemon juice, 1tsp sugar
