People in Taiwan enjoy lots of fusion food from our neighbours in Japan, China and Korea. So here we want to show you one of Mark’s favourite meals which is served in many ‘New Cafe’ style eateries around Taiwan. It is traditionally served in a hot stone bowl which has been in a very hot over for a period of time. However Joanne and I don’t own such bowls so we made this crispy kimchi pork rice 泡菜鍋巴飯 on the hob. It tastes exactly as delicious as the version we ate in Taiwan last summer. The rice crisps where it touches the pan surface as do other key ingredients like the Kimchi and pork pieces. There’s so much flavour in this! And its a little bit spicy too. We like to serve with some fresh cold Kimchi on the side and a few thin slices of red chilli for colour.

- pre-cooked rice
- belly pork
- spring onion
- paprika, chilli powder
- fish powder
- soy sauce
